Baked Tofu with Seasoned Marinade

This classic tofu dish was the highlight of my vegetarian Christmas dinner! The full day of marinating plus the hour baking in the oven made this tofu packed with flavor, and deliciously crisped on the edges. Super simple marinade, and goes great with my mushroom gravy recipe—link included below!

Ingredients:

2 block of extra firm tofu [this easily served 4 people and there were leftovers]

3 tablespoons of olive oil

5 tablespoons of soy sauce

1 tablespoon of crushed garlic

Pan-Seared Tofu, Asparagus, & Sweet Potato Fries

Found this method of cooking tofu on Pinterest, and decided to try it—I think it might be my new favorite way of frying tofu! Grocery store had skinny asparagus this week, which I absolutely love, and of course sweet potato fries seemed like the perfect addition!

Ingredients:

Extra firm tofu

Sweet potato

Asparagus

1 teaspoon cinnamon

1/2 teaspoon cumin

Delicious & healthy meal with a twist! I saw this baked tofu recipe on the Whole Foods website and adapted it to make it quicker and still as yummy!

Small potatoes [New potatoes work best, yellow or red]

Dijon mustard

Really Simple Vegetarian Stir Fry

I’m working on a paper tonight, so I don’t have much time for dinner but I want something that will keep me full while I slave away at the library! Still living the student life where Thursdays are supposed to be the weekend, so I’m not overly excited that tonight is a study night. What I am excited for is this dinner—my classic meal for these kind of nights! It’s easy to prepare, pretty quick to make, and still healthy & filling!

Brown rice [much healthier than white rice, and I love the slight crunch of the shell!]
