It’s so incredibly hot here [over 85 degrees and super humid], and my lack of air conditioning has made cooking quite brutal. But the great thing about cous cous is it tastes great hot or cold, so I only had to suffer the heat once and now I have work lunches for the week! This dish is super healthy, really simple and quick to make.

Ingredients:
1 cup of dry cous cous
1/4 cup of olive oil
1 eggplant
1 red pepper
1/2 onion
Lemon juice
1 teaspoon cumin
1 teaspoon paprika
1 teaspoon chile
1 teaspoon salt
1 teaspoon pepper
1/4 cup of crushed almonds
